Tim and Nancy Cushman have opened an outpost of O Ya — their beloved Boston sushi restaurant — inside Gramercy’s Park South Hotel. LikeShuko and many of New York’s other (relatively) new omakase-style restaurants, O Ya is a splurge: The cheapest option is an 18-course, two-hour-long tasting menu that costs $185, and there’s also a 23-course menu offered for $245. Right now, the O Ya team is keen on cultivating a sense of mystique, but here’s a look at another of the dishes:
